Paya Masala is a traditional spice blend for slow-cooked trotters stew (Paya). It combines warm, aromatic spices like cumin, coriander, cloves, and cardamom, giving the dish a rich, hearty, and deeply flavorful taste.
Ingredients:
• 1 kg beef or lamb (paya)
• 3–4 tbsp Paya Masala
• 3 tbsp oil or ghee
• 2 large onions, sliced
• 2 tbsp ginger-garlic paste
• 6 cups water
• Salt to taste
• Fresh coriander, lemon, and green chilies for garnish
Method:
1. Heat oil in a heavy pot and fry onions until golden. Remove half for garnish.
2. Add ginger-garlic paste and trotters. Sear for 5–7 mins.
3. Stir in Paya Masala and salt. Cook 2–3 mins until aromatic.
4. Add water, cover, and simmer on low heat for 4–6 hours until the trotters are tender and the broth is rich.
5. Garnish with fried onions, coriander, green chilies, and lemon slices. Serve hot with naan or steamed rice.
